Directions

  1. Mix sugar, cornstarch and salt in saucepan.
  2. Gradually stir in water.
  3. Cook, stirring constantly, until mixture thickens and boils.
  4. Boil and stir 1 minute.
  5. Remove from heat; add lemon peel and butter.
  6. Gradually stir in lemon juice and, if desired, 4 drops yellow food color.
  7. Cool thoroughly.
  8. If filling is too soft, refrigerate until set.
